It probably depends on the compound and the solvents in question.

Consider evaporation at a lower temperature or freeze drying if it is in an aqueous solution.
You can also try some solvent extraction procedures if it is degrading while evaporation.
How did you do the evaporation process? If you used compressed air, the compounds may be oxidized.

Salaam and greetings. Enantiomers do retain their purity after separation and evaporation in most of the cases unless:
1) the enantiomer does racemize during evaporation process of the solvent.
2) The isolated enantiomer is degraded during the evapration of the solvent being thermolabile or photosensitive and therefore, it does degrade.
You can use Freeze drying technique in this case to avoid both the heat and also keep the isolated enantiomer under nitrogen to avois oxidation.
