Yes, you can use proteose peptone. There is not any difference between proteose peptone and peptone, but proteose peptone (peptone) is produced by an enzymic method.

Proteose peptone is a precursor to peptone, which should be more water soluble in the agar medium. I am not sure if it will affect your ability to select certain strains of fusarium. If you are looking for strains that specifically break down peptone, then using these precursors might not do the trick (since they are already partially "broken down"). All you can do is try.

As I think, there is no differences between peptone and proteose peptone. So, you can use available peptone which found in any laboratory.
You can use other selective media for isolation of Fusarium species such as CLA medium (Carnation Leaf Agar). This medium improves the fungus to produce sporodochia on the medium.
I am always using PDA medium (Potato Dextrose Agar) to isolate and grow Fusarium species easily and successfully. This medium allow the fungus to grow well and produce microconidia, macroconidia and chlamydospores.
