What the proper method to check color stability test? I will extract pitaya peel by using water as a solvent, the red color appeared on the solution extraction. it's interesting.

It all depends on the intended use of the dye. Will you use it in solution, or should it be used to dye some material , e. g. fibres ? I think the dye is a carotenoid, but I have no further information on it. Carotenoids normally have rather bad color stability. Do you mean stability to light ?

to analyze stability of color usually using spectroscopy (if your samples are clear solution), another method is chromameter, this instrument can profiling the color characteristic of your sample, this instrument can measure sample with vary state (liquid, solid, semisolid). if you use spectroscopy method, it is better for you to know which compound that influence the color of sample, so you can focus to the maximum wavelength of those compound. to find the max wavelength, you can perform the scanning process in visible range of light.
