I am looking to run multivariate linear regression for my study and am wondering how to code for the independent variables. The study looks at the effects of one of three diets on a variety of different outcomes. In addition to the diets there are also 3 distinct timepoints on the diet (12-, 24-, 40-weeks) with independent animals in each timepoint. I was hoping to build a regression model that incorporates 1) Diet, 2) Time on diet 3) %adipose tissue as the independent variables but wanted to make sure my methodology was correct.

For diet (catagorical) I have made 2 dummy variables (0 and 1 value), but I am not sure if I am able to just put the timepoints into the model. The animals can only be at one of three timepoints 12, 24 or 40 so should I treat this as a catagorical variable or otherwise?
