I f you are targeting tannins ,phenols and flavanoids I think you can try with c18 column and mobile phase of polarsolvents you can choose. I think dveloping your method willbe interesting. If you are working with uv vis detector I think you can try with 254 nm.
I am also learing but I thinkits safe to develop methods by one by choosing optmum conditions for target molecules.
If you are planning to look at flavonoids (and phenylcarboxylic acids), if present in your sample, refer to the following article. This gives you a general HPLC/UV/MS conditions for flavonoids and ways by which you could identify them (tentatively, at least).

I am sure this would help. If you are looking for catechin/procyanidin/oligomeric procyanidins, look for the methods prescribed in Pharmacopoeias (USP/BP) for green tea extracts or grape seed extracts monographs which gives you specific HPLC protocols that you could extend to LC-UV-MS detection.
