You should not replace alcohol dehydrogenase with sorbitol dehydrogenase. . Sorbitol is the alcohol form of glucose which is an aldehyde. Sorbitaol is dehydrogenase is specific for the conversion of sorbitol to fructose. On the other hand, alcohol dehydrogenase is a group of enzymes responsible for interconversions between alocohols, aldehydes and ketones. The activity of alocohol dehydrogenase is characterized by the reduction of nicotinamide adenine dinucleotide NAD+.

Hi, is it should not or cannot. The reason i ask is because if it is 'cannot' i will purchase the sorbitol dehydrogenase. If it is 'should not' as long as there is some conversion it will be fine. I understand it is not ideal, but as long as there is some cross-reactivity. The reason is we have some alcohol dehydrogenase lying around and if its somewhat usable i don't want to spend money buying something unnecessary.
