I would also like to do a single organisation study, and undertake five interviews. But, would i need to supplement these with surveys etc? anyone have tips on what i should do? or whether i should conduct a mixed method study of quantitative and qualitative. Or, a single method of qualitative? many thanks

There is no problem with doing a "single case study," so long as you can justify the importance of the case. In other words, would your colleagues consider it a sufficient contribution to knowledge to learn about the that specific organization in depth and detail?
Of course, that also raise the question of whether 5 interviews would provide sufficient depth and detail. That might conceivably be enough for a qualitative study, but there is no way that you could do meaningful quantitative analysis on such a small sample -- which would also rule out mixed methods.
Studying a single organisation is not a problem. What you need to do is identify and define a research problem relating to the organisation you wish to study. Your methods of data collection should be guided by your research objectives. Once you are able to identify the research gap you wish to study, generate your objectives and select your research methods in response to the specific objectives you have outlined.
If it's a new phenomenon you've chosen the suitable research design (qualitative). One company is relevant. Questionable is your sample of five. Is it exhausted sample? If yes, it's no problem,I guess. If not,why you had chose 5 informants..
The answer depends on your focus. Mine was both historical and organizational. I studied a single organization as it was created specifically for the development of distance education at the university level in Québec. For that purpose I collected many statistics and analyzed a number of reports, both governmental and university-related. On the qualitative side, I interviewed the main officials implied with the development of this organization as well as its managers. This study covered the period from the original decision to create an experimental organization to the date when the organization gained official recognition.
