Looking at papers with organic solvent based electrolytes. They all use organic salts. Why aren't common salts like Na2SO4 used. Is it a solubility or is there some organic chemical reaction I'm unaware of. Also, do orgainc salts/solvents require a glove box for treatment?

Generally the reason is solubility, as you suggested. There would usually not be a problem with reaction unless the anion in the salt is highly oxidizing, for example perchlorate (which should not be used in organic solvents). As far as needing a glove box, that would depend on the salt/solvent in question but generally not. I would advise working with organic solvents in a fume hood or with other means of ventilation for safety.
