I've found plenty of examples for specific examples, e.g. carbonate platforms, but can anyone recommend a comprehensive scheme for carbonate environments of deposition (EODs) that captures everything from pelagic to lacustrine? The goal would be standardized GDE legends across a international oil company's full portfolio.

I recommend chapters 4 and 5 in Carbonate Sedimentology book of Tucker and Wright (1990). Also Chapter 4 Carbonate sedimentology and Sequence Stratigraphy of Schalger (2005).
Flugel (2004), Tucker & Wright (1990), Schlager (2005), Read (1982, 1984), and several other literatures.
Sorry to add one more
Scholle ( 1983) , carbonate depositional environments is an excellent book, specially for field studies. It is an AAPG memoir.
