I read some reviews that have charts showing the number of published papers about certain topics within a specific time frame. How that can be done?
Please find attached an example of what I mean.

Well depending upon the newness of the field and the popularity of the field, there is various amounts of information available. It is rather tacky that the authors do not indicate how they generated those figures. Reproducibility?
Anyway, you can get a lot of information in bar charts about a particular topic by searching for it on Web of Science. If you can't access this site. You should be able to access the site if you login to the database from your online university library.

Lets do a cursory look of the topic: "image classification".
Keep the quotes.
Click search. Analyze Results button. Dropdown menu showing "Web of Science Categories". Change the Field to "Research Areas". Visualization, change it to bar chart.
And if I play with those same dropdown menus and I can get the number of publications over time for "image classification".
So basically we can see from these charts that computer scientists and engineers are into this topic. Why is probably because they are developing Artificial Intelligence to classify images. That requires programming and engineering, and we can see that the field is booming because the publications are increasing geometrically till now.
