You can start by reading generally about the environment/and sustainability. Then, you move on to read Brian Tomlinson's. Tomlinson's work is centered on materials development. For example, you can consult:

I think that a viable theoretical framework for your thesis could consider the need to move any curriculum (including language) toward econcentrism.
