Image>Color>Merge Channels...

Then chose which image you want in each color and the options below.

Given the images you attach here check the "Ignore source LUT" checkbox.

I find it more easy and straightforward in Photoshop where each channel can be overlayed as individual layers using the "screen" mixing option in the layer setting. Photoshop also allows you to quickly adjust the image histogram, crop the area of interest etc. Photoshop is not free, however.

Easiest is to use the "Image-Color-Merge Channels.. " option in Fiji/ImageJ. You need to have all your images open in the program when doing this.
