I have prepared an emulsion using only Tween 80 as an emulsifier. After measuring the zeta potential value I found that it ranges between -8 to -16 mV.

Zeta potential above 30 is said to indicate a stable emulsion. How does a non-ionic emulsifier influence the zeta potential value? Is it possible that the charge is due to the oil that I have used?
