Why the large grain contains small grain inside ?

We currently recieved a sample from industry. It is high manganese steel (Hadfield steel) with a composition of Fe-12Mn-1.1C, after austenization treatment. We find that the grain size of this sample is very large (>500 um). However, numerous small grains (about 50 um) were found in the grain boundaries and inside grains. It is not consistent with the textbook, why ?
