The short answer is that the carbon-based inks typically have a higher resistance than silver-based inks.

I agree with Jules. Silver is the best conductor among noble metals. It is important that electrons are transported efficiently. Copper is commonly used for connections because is less expensive, but in the form of wires or foil, not inks. Carbon can also be employed; actually it is, but the resistance can be higher.

I do agree with Julus, But people are using Graphene because it will be the competitive to that of silver line in terms of less expensive.

There are also hybrid compositions available that use Ag and carbon; not only admixtures of Ag and carbon, but Ag coated varieties.

If you have poorly conducting electrodes it will distort your data, I made these and sadly not so good :(
