This should be the reaction. but during my recent experiment, my manual mentioned about CO2 formation after being heated in water bath. can anyone explain about this?
Both answers provided by Ehud and Fadhil are correct.
It is actually quite hard to obtain a completly CO2-free water. The moment the purified water (distiiled, de-ionised, etc...) comes in contact with the atmospheric air, the CO2 begins dissolving in water forming the carbonic acid. Of course the concentration of carbonic acid which originates from the atmospheric CO2 is usually very low but it still may give you some bubbles.
Additionally, the solubility of CO2 (and other gases) decreases with the increasing water temperature (see the attached link) so if you have a CO2 reach water to begin with you can definitely expect the CO2 release during heating.
