Let me add to the list the Italian breeder Nazareno Strampelli.
A wheat breeding pioneer (early 20th Century), he basically anticipated by decades some Borlaug achievements, and obtained largely successfull cultivars by crossing different materials, included a dwarf line from Japan as well as early materials to skip early summer hot temperature. Some bread wheats from Strampelli, apart from Italy, were grown on million of hectares in China in the '60s and '70s.
Unfortunately, as a genuine and practical breeder, he made new cultivars but published very few papers, no one in English. Only in the '90s his work has been recognized at international level.
I will only mention some of the most influential scientists in agriculture in my country Sudan: Prof. Hamid Drar; Prof. Mohamed Ali Gneef former Minister of agriculture, Dr. Mohamed Ahmed Osman Ibnouf and many others
Although already mentioned some important players, do not forget to ancient civilizations, e.g. in Latin America the Maya, Aztecs, Incas, etc., left great contributions to agriculture. The Incas noted for irrigation and cultivation in terraces, the Aztecs with their chinampas (culture system the lake area of the Valley of Mexico) and Maya highlighted by the use of agroforestry systems. Similarly in other latitudes ancient civilizations, provided important processes and innovations used in agriculture.

Dr. Norman Ernest Borlaug stands out as one of the best agricultural scientists of the 20th century. He was an American agronomist/pathologist who has been recognized as the father of the Green Revolution (cf: the book titled "The Man who fed the World" authored by Leon Hesser in 2006). He was awarded the Nobel Peace Prize in 1970 for his outstanding and invaluable contribution in the field of agriculture. The World Food Prize was established in recognition of his life time work.
