The manuscripts in my field (polymeric Drug delivery) includes mostly images, a few tables and 2-4 equations. Also formatting the manuscript into different journal type and managing references is a huge task. Please suggest me which one is better
This depends on how much of a learning curve you want to go through.
Word and Google Docs are quite user-friendly.
If you have never used Latex - you'll need to practice and get used to a very different interface to Word. But I would recommend this as it is quite versatile adding in figures and equations.

It depends on how much learning you have in each of the soft-wares you've mentioned in the question. MS Word is one of the bests and it is a user friend software and easy to use; furthermore you can find lots of tutorials over the internet. if you have never used Latex you should spend time to learn it and learn some codes to generate newly docs, however you can find tutorials and templates in the internet.
