Hello, i would like to determine the emulsion capacity with the following method:
Immediately following homogenization, sample conductivity was measured using an Orion 3-star conductivity meter with a 4-electrode conductivity cell (Thermo Scientific, Waltham, MA, USA). The emulsion capacity was determined to be the point in which an oil-in-water emulsion changed to awater-in-oil emulsion (inversion point) as indicated by a large drop in conductivity. The EC was defined as the average grams of oil emulsified before and after the inversion
point per gram of protein. At the inversion point, the oil-in-water emulsion undergoes a phase inversion to form a water-in-oil emulsion.
Do you know the range of conducivity for this analysis? I have a conducimeter with range from 0.00 to 29.99 μS/cm; from 30.0 to 299.9 μS/cm; from 300 to 2999 μS/cm.
