I am searching for tools to collaboratively write R code together (and run it in an online environment). Crucially, the functionality should be similar to Google docs, i.e. all users should be able to edit the same code simultaneously. Any ideas?

Perhaps, RStudio Cloud or Microsoft Azure could do this?
I don't agree. You should not share code until you have published your results, for copyright reasons, especially if it is a novel approach. Treat R as part of your research method

Did you have a look at https://rstudio.cloud/? I do not used it myself, but might be worth a closer look.
