I would say that there are some bacteria with high quantity of EPS. You can try to isolate them on general agar medium.

Do fluids associated with bad smell? if its artificial inoculation it may be contamination the colony with virus or bacteria, or using microbial insecticides

Good question.

These differences are probably a result of varying interactions between insect feeding specifically on the parenchyma in the stem, plant endophyte(s) and plant secondary metabolism.  It is unlikely that is has to do with breaching the node although that is where liquid assimilate would be most likely to be encountered and liberated.
