You could certainly achieve something similar using modelling packages such as 3DS Max or Maya, but there would be a big learning curve. Turbosquid also sell medical models that could act as a starting point but they are quite expensive (https://www.turbosquid.com/3d-model/science).
I also did a quick google search and found this medical application https://www.visiblebody.com/ this might be useful because you wouldn't have to learn to create and render 3D models.
I am not in the medical visualisation field but I suspect there might be more packages such as the visible body that could be able to achieve what you need or at least get you most of the way there. This would be allot quicker than trying to make things yourself if you are not a 3D modeller.
