Hello.

I'm recently researching for 'Maillard Reaction Products(MRPs)' made of sodium caseinate or whey protein isolates, and setting experiment for this. So I tried to dissolve MRPs ,which I thought it would be water-soluble, to distilled water with heating at 55oC, but it made protein precipitation. Also I dissolved it to DMSO and ethanol, but some of them still made precipitation in DMSO and all of them didn't dissolve in ethanol. What should I do?

Thank you for reading this and please let me know.
