There are several techniques that are used to granulate and encapsulate proteins and
peptides. The simplest way is by spray-drying combined with agglomeration. Other
main techniques are fluid bed techniques, high and low shear granulation, and
extrusion. Also techniques of encapsulating enzymes in liquid matrices like liposomes or gels like alginate and carrageenans are used.

Well, do you refer to ionic gelation of alginate e.g. with calcium chloride?
