I would start with some acceptability questions, trying to figue out which are their expectancies about the course (¿qué expectativa tiene usted del presente curso?). Usually students ask previous years fellows how the courses are, so this would be a valuable starting point.
I would make a second control al the middle, to check if this are well organized (how do they feelabout community or practica work, about instructors, about methdology, about lecturers, not too long, just few questions)
I would make at the end of the course, a satisfaction survey, including if they stisfied their own expectatives, the course lerning objectives, and how the process quality (instructors, etc) went during the whole course.
