At the layer2, the information about QoS is stored in the 802.1p value, which is a 3 bit field, hence delivering 8 possible classes of service. At the so-called layer2.5 (MPLS) you have the EXP field, also consisting of 3bits. At layer3, you have the DSCP field, with 6 bits, hence 64 possible values. The 3 left-most values of DSCP are used to map the traffic on the lower layers.
Once you've covered all the QoS tagging related concepts, you'll need to understand how to classify and prioritize traffic, how policing and shaping work, schedulers, etc. Depending on the vendor (ie Cisco, Nokia, Juniper, Huawei, etc) those concepts, even though they follow the same idea, are implemented in different ways.
