in the context of the hydropower generation, what is the limit of power generation?
Should I see it limited by the nominal capacity of generators, from above?
Because, I see that in the Turbine Hill-Chart, and its safe operation region, it can produce way more than nominal capacity of the generators of the power plant.

Hydro power plants work as peak load supplier. It means these plants regulate deficit power required to maintain power balance and system frequency. Therefore, power output of the units are anything within their minimum generation level to the maximum generation level. Also, some times such plants are used as base load supplier in which units operate at their maximum power limit. As the cost of fuel (water) is freely available, so, it is always advantageous to use as more hydro power as possible. However, water must to available with sufficient head to continue to rotate the turbine.
The maximum power is the product of the volumetric flow rate (vdot), the water density, g, and the change in height (vdot rho g h). This number, times the losses in the channel and the turbine efficiency is the actual energy. Hydropower plant outputs in the US are determined to a very large extent by managing fish habitats. They are higher in the spring than the fall because of the greater availability of water, but major facilities operate in a manner that does not disturb fish as their first priority, with demand and availability of water being lower priorities.
It is almost a rule that nominal turbine power is greater than generators rated power. Several reason are behind that. The most relevant reasons is that designers for generators want to be on safe side when they sign the contract. That means rated power of generator must be fulfill in contract. Than in contract it is usually a clause that after all generator test procedure is finished, if generator can give few percentage power more, generator vendor can have some bonus. Second reason, to build turbine with greater rated power is that in future during some revitalization process for generator you can increase generator power. You can revitalize or expand excitation system, for example. Third reason you can increase water flow for few percent with some refurbishment of water tunnel. In that case, it is good if turbine and generator can increase their production. Anyhow, it depends from case to case.
I haven't researched beyond my country Kenya. In Kenya though, the maximum possible voltage that is preset for each alternator unit is 11KV. Several responses sill be exists for your question:
1- the generators are in all cases safed side when they sign the contract.
That means rated power of generator must be fulfill in contract wich claused after all generator test procedure is finished, if generator can give few percentage power more, generator vendor can have some bonus.
2- the build turbine with greater rated power is that in future during some revitalization process for generator you can increase generator power.
3-the various modes of loads connected and switched in the network.
4- the power management is an important criteria of the limit maximum and minimum of power generation.
