Sure it will be denaturized (loss its structure and therefore its function) but I don't think that it degrades to shorter fragments since the energy of covalent bonds higher than to be broken by the temperature of autoclave.
Hi thank you for the response. Then what is the principle behind the solubility of inulin in hot water and precipitation at ice cold conditions. Is this because of denaturation and renaturation? Inulin is a linear polysaccharides. What is denatured inulin and native inulin? Please clarify
