If you are just looking for a response, the best, cheapest and easiest to do is to actually measure the performance of an antagonist on a plant that was previously damaged and one that was not damaged (control) . If you do so, you measure induced resistance and you could do it with almost every plant for which you have a herbivore.
Otherwise in addition to some standard gene expression measurement, you may consider easy measures of secondary metabolites, such as nicotine in tobacco, proteinase inhibitors in tobacco and tomato
