Currently am working with a synthesis of ZnS-Mn nanoparticles, with DMF as the solvent. We've tried to precipitate out the particles with DI water, EtOH, hexane, and hexadecane with no real success. Any suggestions?

Perhaps you can concentrate the solution under vacuum prior to the addition of non-solvent such as water, acetone and ethanol.
DMF can be evaporated in a rotavap around 20 mbar and 50 degrees. Normally, addition of toluene can assists to the DMF evaporation due to the formation of an azetropic mixture.
Hexane is not miscible with pure DMF but you can also add CHCl3 to mixt both phases
