I am looking for public datasets of COVID-19 patients with biosignal information (ECG, for instance) and/or imaging data (X-ray, CT scans). Found some CT scan datasets but with a low number of cases (~50).
Is there any dataset I might be missing?

it will give you several groups that are gathering radiological data. I have not heard of anyone using EEG. But there should be groups with EKG/ECG, blood pressure, and the like. Most people who seek treatment have sniffles, fever, headache, body ache, sneezing and common symptoms of flu and respiratory disease. Surprisingly many people die at home, older people, people in bad health. So self reporting of symptoms is the largest body of available data, but no one is organizing it. The hospitals take that but will not share. WHO collects some, but they are the worst data collectors and sharers in the world.
If you have any internet or computer skills and really want to help, build a website and cell phone app for people to report their experiences. The World Health Organization and others have tried to get a standard set of questions to ask. But they mainly work from within existing hospital systems and they could care less about gathering data. But most people get sick and take care of themselves. For every person in hospital beds there are ten times that who only got mildly sick or not at all. No one is tracking that. Check out "WHO" "GoData" which leads to

You can try to do the jobs of the radiologists, but they are already seeing this as an opportunity for themselves. The Europeans have a "Europeans only" radiology collection. And serious datasets will be co-opted by people wanting to improve their jobs and professions.
The Dicom is a good clue because without the case information most of the information is useless.

Biological and biomedical imaging technologies are essential for addressing many research questions, such as those related to Covid-19, from fundamental research at the molecular and cellular levels to medical applications and diagnostics. Currently, computed tomography (CT) is the imaging method of choice to diagnose and monitor patients with COVID-19 because of its resolution, availability in intensive care units, and cost-effectiveness. However, most of the available imaging modalities will be centrally involved in research projects aimed at the development of therapeutics and diagnostics to combat coronavirus infection. The need for an in-depth understanding of the molecular processes of the infection will require the design and testing of innovative imaging probes and the access to proper cellular and animal models that are in the domain of Euro-BioImaging Nodes. Moreover, the skills in image analysis together with the access to powerful AI tools will represent an area where our research infrastructure aims to support the biological and biomedical communities.
