What are the origin of crystals that form upon heating castor oil?

In the process of maleinizing castor oil with maleic anhydride I am observing formation of crystal-like structures upon heating the solution above 100 degrees Celsius. The solution is just castor oil and maleic anhydride with no water addition. I am also using a Nitrogen purge.
