I would like to know the various techniques/methods which are used to characterize the crystals of a known substance (xylitol) and to check the purity as well as to quantify the impurities present in a crystalline compound such as xylitol (a sugar alcohol).

If you meant crystal structure then X-ray diffraction (XRD) is the method you should go for.
Electron Microscopy and Energy Dispersive spectroscopy can help you with the purity of sample.
You can use FTIR to identify the functional groups present.
The most common technique is XRPD, DSC, TGA for solid state characterization. As the purity, for other compounds , use RPLC, For amorphous content, use XRPD, but you need reference standards of amorphous and pure crystalline materials. The limit of quantitation is not better than 1-2%. There are more expensive techniques as mentioned by Vignesh; however, they require more expertise.
Characterization essentially involves evaluation of the chemical composition, structure, optical, mechanical, electrical and thermal properties of the grown crystals[12-18]. Different types of characterization techniques are available to study the physical and chemical properties of the crystal. Some of them are following. There are number of experimental techniques used in the present investigation tocharacterize the properties of the grown single crystals such structural (XRD, HRXRD), thermal (TG/DTA), optical (UV-Visible, photoluminescence), vibrational (FT-IR/Raman), hardness and dielectric measurements.

Arushdeep.. X-ray diffraction, XRD, is the major tool for the examination of crystalline solids. Powder XRD may furnish the preliminary data on the crystallinity. The more precise technique is the XRD examination of a single crystal of your material. You may get after using the supplied software, the bond lengths and the exact distribution of atoms within the crystal. Good luck
