Eco-tourism is an example of non-consumptive use of biodiversity, whereby the aesthetic of biodiversity (such as forests) are exploited for economic gains.
Are there any other examples and research done on this?
Tourism, recreation and sport are probably the most important. Another non-commercial use of natural resources may be the local folk medicine and mushroom picking.
The best example I can think of is the Sacred forests of the Western Ghats...where you are not allowed to even remove dead wood for firewood for example. This idea of the Sacred goes along with E.O. Wilson's concept of his "Half-Earth Project" at https://www.half-earthproject.org where he is suggesting we give up 1/2 of the earth to the other species on the planet? I was suggesting in a Research Gate question a few years ago 35%, but Dr. Wilson beat me at his suggestion of 50%!
Educational research is an example of non-consumptive use of biodiversity. Several research has been done on various wild flora and fauna which have contributed to knowledge in the scientific field and has help to uncover the benefits and importance of biodiversity conservation. Another non-consumptive use is the creation of employment or job opportunity for people working in the field of many aspect of biodiversity monitoring and conservation.
Eco-tourism is correct, but also this activity can become to much if numbers of visitors grows to a too high level and thereby creates negative impacts on species flora and fauna.
