I may be doing a project related to teaching Tourism English. What advice to you have? What kinds of student activities work best? How do you structure such a course?

Good to hear from you again. How are things? As Bimo suggests, field trips can be an option. Also, doing simulations. That is, create your own scenarios to meet your purposes, create participants' profiles and conduct the simulation bearing in mind the three core stages:
stage 1- briefing( introducing learners into the dynamics, providing content and clear instructions)
stage 2- action/ simulation(each participant in their role carry out the simulation)
stage 3- debriefing (gruop work reflection on the learning, the action, the drawbacks)
Remember, this is not a competition and the ending to the simulation is open. You never know the decisions the participants are going to make.
