I am doing a literature review and found over 60 papers published from all over the world.
But that research has not been done in the area I am interested in.
Should I address that topic or not?
I would like to suggest you for focusing on research gap in your own area - what is really required and how important your findings that can positively impact our. Finding a research gap and having the means to develop a complete and sustained study leads to novelty.

It is seldom unless the prior research didn't fulfills all aspects of topic.
In my opinion, this means that the topic is very important for research and is still relevant. So you are probably on the right path.
I agree with Denis.... there are topics that are very important and need many variatations on a theme in order to truly understand the nuances involved.... If you feel you have something new to add to the discussioin/exploration by all means conduct your lens on this topic....
