We are quantifying carnosine using HPLC with a HILIC column (from Waters), I would like to know if it is possible, in the event that carnosine gives up an electron to reduce ferric iron (Fe+++) to ferrous iron (Fe++) in the digestates, that the free carnosine measured in these same digestates is not influenced by the missing electron; i.e. that we don't see a difference in total carnosine via the column used?
