I want to know whether we can use refrigerated faecal samples (in 4 0c for two weeks, refrigerated within 2 hours of the collection) for extracting genomic DNA from GI parasites? both protozoans and helminths?
Or do I need to surely preserve them using potassium dichromate to preserve the stages at the collection?

Preservation in 2% PVPP is very suitable for DNA extraction and elimination of PCR inhibitors.
Those fecal samples are from which species? For dry fecal pellets (ruminants,
lagomorphs.. ) you can keep samples for 3 weeks at 4C without any problem. But for moist samples (carnivores, humans..) it's better to stabilize them in suspension with formaldehyde 37 (1/600). Anyway, for GI nematodes it's better to make cultures of L3 larvae and you extract DNA from each unique larva pattern.
