That sounds a difficult challenge. Scales under each wheel, then subtract the weight of a the bed without the patient.
I once weighed a car by measuring the area the tyres touched the ground and the tyre pressure. The same could be done with a bed if it was fitted with pneumatic tyres :).
As I searched the are a little methods for measuring weight.
One of it using a special formula
(anthropometric measure)[1]
But it's not very accurate.
Another method is to use a special bed [2]
My Idea:
Is to use 2 beds, one work as a normal bed and the 2nd bed working as a scale and can connecting to 1st bed.
The first layer can move between beds, so easily can move patient.

we were old school-used patient lifts that were scales, we used that when changing out the sheets or cleaning the patient. so thats a logistics thing to get what you need when you do it. there are beds that automatically compute the patients weight-but tend to be pretty expensive.
Some ICU beds have weighing scale but if incase we dont have bed like that in ICU. We are using the initial body weight of the patient upon admission in ER then We will monitor the Fluids intake and output and also the stool. Also can use anthropometric measurement using type measure usually every morning.
