I am unfamiliar with the amylase from T.castaneum, however, a convenient (commercially available) substrate for measuring human amylases is ethylidene-blocked 4-nitrophenylmaltoheptaoside (EPS-G7). A full method was published by Klaus Lorentz in 2000:
