I recommend checking the model for compliance with the Rankine - Hugoniot laws. This is a well-known analytical solution.

To get a rough idea about your results, equalize the total kinetic energy of rigid projectile at the time of impact with plastic energy stored in the plate. Solve the available equation to get stress in the plate and compare it with obtained results by FEA.
