Try and look up electrochemistry detection of degradation of compounds. Electrochemistry uses a potentiostat and certain material electrodes. I don't know in detail the exact cost.                                In a third world country could be a point of care kit for food analysis as hyaluronic acid comes from skin. Perhaps physical chemistry method. Have you heard of BARDs, broadband acoustic analysis but that is physical chemistry method newly available. 

What about TLC chromatography?. Or flash chromatography. 

We used to measure urease activity in soybeans by monitoring the pH since ammonia was a product of the reaction.  Don't know if this is true for hyaluronidase.

Yes have heard of high performance liquid chromatography to measure the total amount of N acteyl D glucosamine but seems too difficult to do without a proper lab setup.
