According to this half a century old book the absorption coefficient of tryptophan in ethanol is 6300 M-1 cm-1.

But I do not think the absorption coefficient will be strongly dependent on solvent. In my opinion the epsilon value in water (~5500 M-1cm-1 at 275 nm) can be taken as reference in other solvents too.
