I think you need to explain better what you are looking for. What does any of the 3D graphs (rather: images) represent? Is your "model" of reality very crude or quite "exact"? Another - related - issue is what you want the readers to learn from showing them. Do you wish to illustrate how closely your "model" of the simulation/reality is, or how your algorithm - whichever it is - works? Your explanation is simply not enough, but we re all willing to help if we are told more about the story! :-)
You could use both but I think it is better to use the actual values. In doing so, the reader can readily get the necessary information from the plots without resorting to the table of actual and coded values or trying to determine the actual values corresponding to the coded values in the plot. In summary, for the purpose of readability, I believe it is better to use actual values. In any case, that is what I do
