What kind of UDF do you wanna employ?
If the UDFs that not relate to the position of cells, 'yes' you can easily apply that UDFs.
If the UDFs require information about the cell and boundary conditions, 'yes you can. But it is not easy as the previous one.

I want to apply the UDF on the wall. Which is not aligned with any definite axis. IF it is to inlet or outlet its easy. Example: If the esophagus peristalsis simulation, bolus will move. The sine wave UDF is to added on the wall to create the bolus motion. Bit its easy for straight tube or pipe.
