Hello Diki, well it is possible (by simple spectophotometric analysis with pH differentiation method), by to my belief it would be better to express your results as mass equivalent of the major anthocyanin found in each specific fruit. That is, if in the fruit you are working with, cyanidin-3-glucoside is the major one, then you can simply say that the total anthocyanin content is x mg equiv. cyn-3-gluc g-1 f.w. etc.
