I would strongly suggest reading everything Cathy A. Pelletier has published! She's doing some seminal basic work that will allow us to fully understand chemestesis and it's use in therapy!
My colleague Rachel Mulheren just defended her dissertation on this topic and will be moving on to a post doc at Johns Hopkins next month, where she is planning to continue along the same research path. Dear Robin Tucker, my colleagues and I (2010) studied the presence of the selective taste regions on the tongue and also, the palate participation in the oral taste. The tongue was exposed at the four basic tastes (sweet, salted, sour and bitter). We hope the paper help you.
