I'm trying to find a good internal standard for aqueous Fructose dehydration to 5-hydromethylfurfural, for use in an HPLC (due to the water).
It doesnt appear any studies actually use an internal standard for this, though I have found some suggestion that anisole or toluene are good for 5-hydroxymethylfurfural in other studies but no mention for fructose dehydration. I'd rather not use toluene as it would form a second phase that some research has shown to be beneficial for the reaction. Any suggestions would be really appreciated!

I'm absolutely not an expert in this field as we are synthetic inorganic chemists. However, I just came across a potentially useful literature reference which might help you in your analysis.
