I am culturing stem cells on plates coated with gelatin. After finding so many variations of drying time in different protocols, I am wondering what is the reason? In other words, why is it necessary to dry the surface? In the protocol I currently use, some medium is added right after removing the gelatin, would this be not so benefitial for my stem cells?

Any possible explanation/idea would be very welcome.

PS: I think drying the surface could allow proteins to better attach to the plate but this is just a thought...
