Do you use 100% ethanol as the solvent to extract compounds? If you do, it's probably that the compounds that can dissolve in 100% ethanol are not so many. If you want to get more extracts from Zingiber, I recommend you use 60% or 70% ethanol to extracts compounds.
first you have to be clear what kind of compounds do you want to extract from the plant. if your interested compound is soluble in Ethanol, then only you get large amount of extract after ethanol evaporated. i recommenced you to try the extraction with other solvents like methanol, acetone, chloroform e.t.c
